So, Michael's nose isn't flat, but it is definitely quite odd with slitty nostrils.

They're only 35-36ish in OotP, per JKR (not that that's necessarily canon, but MWPP+Lily and Snape appear to have been born sometime between 1958 and 1960 - they're younger than Lucius, who's 41 per OotP canon).
Alan Rickman skews the whole thing older in the movies, because obviously, there's no way he's only 33-34ish in PoA, but mentally, yeah. We can do what we like. *g*

I've been assuming Kingsley is a little bit younger than Remus and Sirius. Samuel Jackson is about 20 years too old for that, lovely though he is.

I've seen Ewan bandied about as Remus quite a bit, and I can see it to a degree, but he strikes me as more solid than I see Remus (unless we're talking Trainspotting-skinny). Hm.
Also, I adore Johnny Depp (have since Nightmare on Elm Street!) and think he'd do a great job with the acting, but his looks are so 100% American in my mind. Even when he's playing non-Americans, I never really think of him as anything but. Go figure. *g*
I love Juliet Landau as Bellatrix! She'd be great.
Hmm... how about Adrien Brody as a closer-to-age-appropriate Snape? (I like Rickman a lot, but he's too old!)

I like your other choices as well, particularly Ewan as Remus. For one thing, I love the full size version of that photo and the other two that go with it. Utterly, utterly lickable, and he's got his hand down his trousers to boot. Also, I would have loved to have seen Ewan in the role.
